Ingredients:

1 Roast chicken $8.00
1 Cauliflower $3.50
4 Tablespoons olive oil $0.60
1/2 Bunch of spring onions, sliced (white part only) $1.20
3 carrots $0.40
1 Tablespoon ginger, grated $0.20
500g frozen peas $1.00

Method:

Roast Chicken or buy supermarket BBQ chicken and shred meat. Make the cauliflower rice by cutting into florets and blend in a food processor until similar consistency to rice/cous-cous. In a pan, add half the oil and raw cauliflower rice and stir on a medium heat for 5-8 minutes until cooked. Remove cooked cauliflower. Add the remaining oil, spring onions, carrots, ginger and peas. Cook on a high head for 5 minutes until carrots are slightly cooked. Stir through soy sauce and sesame oil, and cook for another few minutes. Mix through cauliflower, chicken, and add any additional soy for taste.
